Instructions
1. Start by marinating the shrimp. In a medium sized bowl, mix together all the ingredients for shrimp. Add the shrimp and stir to combine, until every shrimp is coated.
2. Heat a large non-stick pan over medium high heat. Add the shrimp and cook for about 2-3 minutes on each side, turning once midway, until shrimp is cooked through. Remove shrimp to a plate and set aside to cool.
3. Assemble your salad: Line the bottom of a bowl with chopped lettuce, topped with chopped tomatoes, avocado, roasted hummus, and shrimp.
4. Drizzle balsamic vinaigrette before adding pickled onions.
5. Enjoy!

Ingredients
For Shrimp
• 500g jumbo peeled shrimp
• 1 tablespoon fish seasoning
• 1 tablespoon smoked paprika
• 1 teaspoon salt and lemon pepper
• 11/2 tablespoon onion granules
• 2 tablespoons olive oil
• 1 garlic clove- crushed
For the Salad
• 2 cups chopped lettuce
• 1 Avocado - peeled and sliced
• 1 large tomatoes - sliced
• 1 spoonful pickled onions
• 2 tablespoons roasted hummus
•
For Dressing
• Balsamic vinaigrette
